- En una olla poner a hervir 1 litro de agua con el apio, poro y media cebolla en trozos. Una vez se rompa hervor, colocar la pechuga del pollo. Una vez listo. Retirar el pollo, enfriar. En un bowl, colocar el pan en trozos medianos y bañar con el caldo del pollo sobrante hasta cubrir. (El pan absorbe el caldo, ir agregando más caldo hasta que quede todo el pan cubierto). Una vez frío el pollo, deshilachar y reservar.
- En una sartén caliente colocar un chorrito de aceite, sofreír el ají en trozos medianos junto con los dientes de ajo y la cebolla en trozos medianos también. Sazonar con sal, pimienta y comino al gusto. Cocinar a fuego alto por 5 minutos. Enfriar y reservar.
- En una licuadora colocar el sofrito con el pan remojado y licuar. Si está muy espeso, agregar caldo de pollo hasta tener la consistencia de una masa para budín.
- En una olla fría colocar el licuado y encender la cocina. Mover constantemente para evitar que se pegue y se queme. Cuando esté llegando al punto de hervor, echar el pollo deshilachado y continuar moviendo. Hervir por 3 minutos (sin dejar de mover) y agregar la leche. Continuar hirviendo por dos minutos más y añadirle orégano en polvo. Mover.
- Para servir, colocar una hoja entera de lechuga y sobre ella rodajas de papa sancochada y bañar con el ají de pollo. Se puede acompañar con arroz blanco y huevo sancochado y aceituna como decoración.
- TIP. Si no se consigue el ají amarillo (también llamado ají escabeche) se puede reemplazar con pimiento (morrón) naranja. El sabor queda un poco diferente porque es un toque más dulce que el ají.
