- En esta mezcla vamos a agregar nuestras entrepiernas de pollo deshuesadas y vamos a mezclar lentamente. Luego de esto vamos a refrigerarlo por 30 minutos mínimo.
- Por otro lado vamos a agregar nuestro chuño en un plato largo, en el cual vamos a agregar nuestras presas ya reservadas de la refri y la vamos a apanar por completo con nuestro chuño por ambas partes.
- En una sartén u olla grande vamos a agregar una buena cantidad de aceite vegetal o el aceite que uses para freír, esperaremos que caliente bien y vamos a agregar nuestro pollo para que se pueda freír bien por ambos lados, una vez ya frito lo vamos a reservar.
- En otra sartén limpia, vamos a agregar un chorro de aceite, y añadimos una cucharada de ajo molido, sofreímos y agregamos un trozo de jengibre o kion, movemos y luego añadimos un chorro de agua y colocamos 1 cucharada de salsa de ostión, 1 cucharada de azúcar, para luego añadir una 1/2 taza de salsa de soya o sillao, vamos a dejar hervir a fuego lento y vamos a agregarle 3 cucharadas de aceite de ajonjolí a nuestra mezcla.
- Para que por último terminemos agregando 1/2 taza de la mezcla de agua con chuño aprox. Dejamos hervir por unos minutos y estará lista, por último vamos a servir nuestro plato con arroz chaufa o arroz blanco, nuestro pollo frito y el guiso que hemos hecho encima de nuestro pollo con una pizca de cebolla china por encima.
