- 400 grs. lentejas pardinas hervidas con sal

- 1/4 cdtá. sal
- 2 cdas. harina de trigo
- Para el aceite de oliva
- 1 cdta. de canela
- 1 cdta. comino
- 1 cdta. cilantro seco
- 2 cdas. aceite de oliva
- Para el arroz
- 1 cdta. canela
- 1 cdta. de pimienta árabe
- 2 cdas. azúcar
- 1 cdta. canela
- Semillas de sésamo y más cilantro en polvo

- Cortar las cebollas en plumas y condimentar con las especias, añadir la sal, mezclar. Agregar la harina de trigo, incorporar. Freír en 2 cdas. de aceite de oliva hasta dorar.



- Deben quedar así. Retirar del fuego y reservar. En el mismo perol añadir 2 cdas. de aceite de oliva, el comino, la canela, y el cilantro en polvo y sellar las especias sin quemarlas, incorporar el arroz cocido, el azúcar, otra cda. de aceite de oliva, más canela y pimienta árabe al gusto.



- Mezclar bien y continuar cocción a fuego bajo. Añadir las lentejas cocidas escurridas y la cebolla frita, reservando un poco para adornar plato servido, mezclar con un tenedor e incorporar bien. Tapar y dejar a fuego bajo unos minutos, servir muy caliente.
