  1. Empezamos preparando los ingredientes: picamos fino la cebolla, limpiamos, pelamos y cortamos zanahoria y champiñones; hacemos dados de 1 cm con los pimientos y la calabaza (estos un poco más grandes) y pelamos, lavamos y chascamos patatas y boniato.
  2. En una olla grande ponemos 2 cucharadas de aceite de oliva y echamos la cebolla, cuando esté blandita echamos los pimientos y tras 5 minutos de sofreír, ponemos la calabaza y salpimentamos.
  3. Cuando esté blandito, ponemos la carne que habremos salpimentado, el pimentón dulce de La Vera y el pimiento choricero, un par de vueltas que se unan sabores pero que no se pegue y ponemos el tomate triturado.
  4. Ponemos ahora las patatas, zanahorias, boniato y champiñones. Dejamos cocinar 2minutos a fuego medio
  5. Echamos ahora el vino tinto y cuando se evapore el alcohol, ponemos el caldo (he puesto 3 vasos, puede ser más, depende de si lo quieres con más o menos caldo, como lo cocinamos a fuego lento se consume, pero podemos añadir más si necesitamos)
  6. Ponerlo a potencia máxima hasta que se ponga a hervir, echar ahora los guisantes, el laurel y rectificamos de sal si es necesario.
  7. Dejar cociendo a fuego medio-bajo y semi tapado (4 de 9 en mi vitrocerámica) durante 1 hora y 45 minutos moviendo de vez en cuando para que no se pegue
  8. Dejar reposar los últimos 5 minutos con el fuego apagado para que se asiente el caldo.
  9. Servir calentito y con pan para mojar y disfrutar 😋
