  1. Yo cocino las lentejas a parte. Me facilita la cocción total. Coloco 1/2 taza de lentejas en 2 tazas de agua y llevo a cocinar, hasta que estén blandas pero no mucho.
  2. En una olla profunda sofritar la cebolla junto al morrón. Cuando estén tiernos agregar la carne. Revolver. Cuando la carne vaya tomando color agregamos la panceta. Siempre revolvemos de vez en cuando.
  3. Cuando veamos que la carne y panceta se están dorando agregamos las lentejas con su agua de cocción, la papa y el choclo. Mezclamos. Si vemos que necesita más agua este es el momento de agregarla. Salpimentamos, agregamos el pimentón y el laurel.
  4. También es el momento de agregar la pulpa de tomate y la zanahoria. Yo no lo hice porque utilicé la salsa y zanahorias que me sobraron del estofado. Así que lo puse casi al final.
  5. Agregamos el arroz y la calabaza. Mezclamos. Quizas se necesite algo más de agua. Agregué la zanahoria con la salsa reciclada. Cocinamos hasta que el arroz esté casi a punto. No debemos dejar axque esté pronto porque sino se nos recocina. Cuando esté listo apagamos el fuego y dejamos reposar 10' con la tapa de la olla colocada. Servir inmediatamente.
