- 1 choclo fresco y tierno en rodajas
- 2 papas blancas en trozos rústicos
- 1 boniato zanahoria en trozos rústicos
- 1 cebolla Blanca en brunoise chica
- 1 cebolla colorada en brunoise chica
- 11/2 zanahoria en trozos rústicos
- 3 cucharadas morrón rojo pelado y sin semillas asado
- 2 cucharadas arvejas secas
- 2 fetas (1 cm) panceta sin grasa en cubos
- 1 chorizo colorado
- 1 diente ajo picado muy fino
- Aceite vegetal lo necesario
- Sal lo necesario
- 1 pizca Sal de apio
- 1 pizca Comino en polvo
- Albahaca fresca 8 hojas en tiritas, para servir al final
- 1 hoja laurel
- 1 pizca Pimienta negra recién molida
- 2 tomates peritas pelados y sin semillas en brunoise chica
- 100 cc Pulpa de tomates

- Preparar los ingredientes, lavar todos los vegetales y pelarlos

- En una olla colocamos 1 chorrito de aceite, calentamos y desgrasado el chorizo, lo sacamos y lo colocamos en un plato con papel de cocina para eliminar el exceso de grasa, la olla le escurrimos también el aceite y grasa excedentes. Saltamos la panceta.(era sin grasa)

- En la olla agregamos un poquito de aceite y colocamos, cebollas, tomates, morrón y ajo, los rehogamos muy bien.

- Añadimos la pulpa de tomate, rehogamos, luego agregamos el choclo y cubrimos con agua.

- Vamos agregando con una diferencia de unos 5 minutos entre cada uno, el chorizo, la zanahoria, la papa, la calabaza, cubrimos con agua, añadimos sal, sal de apio, pimienta y la hoja de laurel, dejamos a fuego lentamente, agregamos el comino, tapamos la olla por unos 25 minutos.

- Dejamos luego siempre a fuego bajo, durante unos 15 minutos más, probamos el sabor, si es necesario corregimos y destapamos para que el vapor reduzca el contenido.

- Cuando la papa, calabaza, zanahoria y demás vemos que están bien cocidos, apagamos el fuego, dejamos reposar por unos 5 minutos.
- Servimos con la albahaca espolvoreada por encima, buen provecho!!😉
