  4. Vas a hacer un guacamole express, con la mitad del aguacate haces un puré, agregás el ajo picado, sal, jugo de medio limón y pimienta negra o ají si te gusta.
  5. Ahora batí un poquito los huevos y en una ollita antiadherente, y a fuego medio, andá "rompiendo" con cuchara de madera a medida que vaya cuajando hasta tener una consistencia cremosa, en ese momento retirá del fuego y reservá.
  6. Por último sobre el pan (ya tostado) en una colocamos la mezcla de quinoa, el guacamole, el huevo y arriba las cebollitas caramelizadas. Agregá sal y los condimentos que quieras.
  7. En la otra variante agregá el puré de zapallo, la otra mitad de aguacate cortado en rodajas, jugo de limón, el huevo y 1 cda de mayonesa casera. Arriba tírale unas hierbitas frescas, sal y listo!
