  1. Ponemos las uvas pasas en un recipiente con el vino y zumo de media naranja un par de horas para hidratarlas y que cojan el aroma del vino.
  2. Ponemos la soja texturizada en remojo por lo menos 20 minutos con las hierbas provenzales, el garam masala, un zumo de media naranja, pimienta, una pizca de sal y el caldo verduras.
  3. Preparamos las verduras y lo vamos cocinando en una cazuela con un chorrito de aceite de aguacate. Cuando empiece a dorar introducir el ajo, el tomate y la soja texturizada, cocinamos hasta que las verduras estén tiernas. Reserva.
  4. En la misma cazuela ponemos agua a hervir, cuando empiece a hervir introducir el cous cous, apagar el fuego y dejar 5 minutos que esté hinche. Sacar y escurrir en un colador.
  5. Introducir las verduras, la soja texturizada y el cous cous todo junto en la cazuela para que se impregnen todos los sabores un par de minutos. Rectificar de sal.
